Everything at Zeitouna starts with where it grew — the olive terraces above us, the sea eight minutes down the hill.
We don't chase trends. Our kitchen runs on what the Chouf mountains and the Beirut coast give us that week — cold-pressed olive oil pressed by families we know by name, fish bought at dawn, herbs cut that morning.
Everything comes to the table family-style, meant to be shared slowly, over a few hours, the way a proper Lebanese dinner has always worked. Nothing is plated to be photographed before it's plated to be eaten.
